Chef Larry launched his next venture early in 2007, opening Tosca in Historic Downtown Troy, and quickly earning a “Best New Restaurant” award from the NYS Restaurant Association and Metroland Magazine. As a working chef, Larry is behind the stove seven days a week, “the key to his success,” he states. Larry oversees every detail of the restaurant and every guest experience at Tosca. In addition to Tosca, he is also Chef/Proprietor of the Illium Café, a European-style café, and opened his third business on Broadway in Troy, La Marche Vert, an upscale fresh market. Chef Larry has built a strong relationship with farmers in the region– one you don’t see anywhere else. He works with over eighteen different farms and has three farms which grow exclusively for him. Larry even meets with the farmers during the winter months to pick out seeds and help with the planning of the upcoming year’s crops, ensuring the finest fresh produce at his restaurants in the city of Troy.
